Description
The Salem district of Tamil Nadu has garnered recognition for its sago production, also known as Sabudana. Salem Sago, also known as Javvarisi in India, is made from moist starch powder collected from tapioca roots. Tapioca roots from India are known to have a starch concentration of 30-35%.
Since 1967, sago industry has been a pillar of Salem's economic prosperity. Over 80% of sago produced in India is currently produced in the Salem region, with a major percentage marketed through Sagoserve.

The Salem Starch and Sago Manufacturers Service Industrial Co-operative Society Limited, also known as Sagoserve, applied for a Geographical Indication (GI) tag for Salem Sago (Javvarisi).
Farmers in the Salem region, as well as the approximately 400 sago and starch facilities in Salem, Erode, Nammakal, and Dharmapuri, will benefit greatly from the GI tag. These regions have a long history of sago production.

Salem area cultivates tapioca on over 35,000 hectares of land, with output averaging 25-30 tonnes per hectare. Sago has a modest calorific value (310 kcal/100g) and is available in sizes ranging from 2 to 4.5 mm. Surprisingly, one kilogram of tapioca sago may be made from only five kilograms of tapioca tubers.
The district's characteristics, such as ample raw materials, low-cost labor, and long daylight hours, make it a suitable location for tapioca-based products like as sago and starch. This has earned Salem the moniker 'Land of Sago,' even on worldwide channels.
