About Career 

As a Baker and Confectioner, you will be preparing various types and quantities of bread, cakes, pastries, savouries, and a variety of other baked food items sold by bakeries, grocers, wholesalers, restaurants, and food retailers. You will be commonly working in manufacturing facilities that produce bread and pastries in large quantities.

Bakers and confectioners are skilled, creative and innovative professionals who are specialized in the manufacturing or preparing of various kinds of cakes, bread loaves, biscuits, bread rolls, pies, cookies, tarts, brownies, muffins, pastries, sweet savouries, sweetmeats, etc. You will be responsible for developing new recipes, prepare items for baking or otherwise preparing bakery and confectionery food items, and presenting them aesthetically.

Key Roles and Responsibilities

As a Baker and Confectioner, you will be involved in following key roles and responsibilities:

1.Checking the quality of ingredients and the number of items required.

2. Measuring and weighing the flour and other ingredients and then mix the measured ingredients in mixers or blenders.

3. Kneading, rolling, cutting, and shaping the dough and then placing dough in pans, moulds, or sheets.

4. Setting oven or griller temperatures and placing and baking items in hot ovens or on grills.

5. Using fryers for frying food items.

6. Observing color and state of the food items being baked.

7. Applying glazes, icings, or other toppings using spatulas or brushes.

8. Operating large, automated machines, such as commercial mixers, ovens, and conveyors.

9. Preparing budget and ordering supplies, setting prices, and knowing how much to produce each day.

10. Cleaning work area, kitchen equipment, and unloading supplies.

Class 8 in school – Obtain NSQF Level 4 qualification in Craft Baker

After your class 8 in school, you can obtain NSQF (National Skills Qualification Framework) Level 4 certification in Craft Baker from any vocational institution or other similar institutions.

Class 10 all subjects as per scheme of studies – Apply for any Craftsmanship Certification Course in Food Production & Patisserie or in Food & Beverage Service or in Bakery & Confectionery.

After class 10, you can apply for any Craftsmanship Certification Course in Food Production and patisserie or Food & Beverage Service or in Bakery & Confectionery from any vocational institution or other similar institutions.

Class 10 all subjects as per scheme of studies – Class 11-12 with any subject combination as per scheme of studies – Obtain NSQF Level 5 qualification in Plant Baker.

After class 12, you can obtain NSQF (National Skills Qualification Framework) Level 5 certification in Plant Baker from any vocational institution or other similar institutions. Plant Bakers are responsible for preparing or supervising the production of baked products such as bread, cakes, biscuits, etc. in industrial units.

Class 10 all subjects as per scheme of studies – Class 11-12 with English & any other subject as per scheme of studies - Apply for Diploma in Bakery and Confectionery / Diploma in Food and Beverage Service / Diploma in Food Production.

After class 12 with English & any other subject as per scheme of studies, you can apply for Diploma in Bakery and Confectionery / Diploma in Food and Beverage Service from any Food Craft Institution or other similar institutions. These courses are usually 1 to 2 years of duration.

Class 10 all subjects as per scheme of studies – Class 11-12 with any subject combination as per scheme of studies – Apply for Bachelor course in Hotel Management/Hotel & Catering Management with Specialization.

After class 12, you can apply for Bachelor (B.Sc. in Hospitality and Hotel Administration) / diploma (in Food Production, Food, and Beverage Services) / degree course in Hotel Management/Hotel & Catering Management with specialization in Food Production Management, Food and Beverage Management.

Class 8 in school – Apply for a Certification course in Bakery and Confectionery from NIOS

After your class 8 in school, you can apply for a Certification course in Bakery and Confectionery from any NIOS (National Institute of Open Schooling). This course is usually 1 year of duration and you need to be 15 years of age before enrolling for this course.

Required Qualification & Competencies 

1. If you have completed class 8 in school and not much inclined to higher education, then you may obtain NSQF Level 4 qualification in Craft Baker.

2. If you have completed class 12, then you can apply for NSQF Level 5 qualification in Plant Baker.

3. However, after your Class 12, you can also apply for Diploma / Certificate in Bakery and Confectionery.

4. If you have completed class 8 in school and not much inclined to higher education, then you may obtain NSQF Level 4 qualification in Craft Baker or you may apply for a certification course in Bakery and Confectionary from NIOS.

5 .After completing class 10, you can apply for any Craftsmanship Certification Course in Food Production & Patisserie or in Food & Beverage Service or in Bakery & Confectioner.

After your class 12, you can:

1. Obtain NSQF Level 5 qualification in Plant Baker.

2. Apply for Diploma in Bakery and Confectionery / Diploma in Food and Beverage Service / Diploma in Food Production.

3. Apply for Bachelor course in Hotel Management/Hotel & Catering Management with Specialization in Food Production Management, Food and Beverage Management.

Undergraduate Degree / Honours Diploma / Graduate Diploma (equivalent to a Degree) Programs for which the minimum eligibility is a pass in Higher Secondary / Class XII School Leaving examination.

1. Realistic - You should have interests for Realistic Occupations. Realistic occupations involve more practical and hands-on activities than paperwork or office work. Realistic occupations often involve physical activities for getting things done using various tools and equipment. 

2. Conventional - You should have interests for Conventional Occupations. Conventional occupations involve repetitive and routine tasks as well as fixed processes or procedures for getting things done. These occupations involve working more with data, systems, and procedures and less with ideas or creativity.

3. Artistic - You should have interests for Artistic Occupations. Artistic occupations mostly involve working with creative ideas, art, and designs. These occupations involve abstract or conceptual thinking, creative self-expression and often do not follow any set processes or rules for getting things done.

4. Customer Service - Knowledge about how to provide customer services. This includes understanding customer needs, helping customers to use products and services, answering customer queries, handling customer complaints and grievances, and evaluating customer satisfaction.

5. Finger Dexterity - The ability to make precisely coordinated movements of the fingers of one or both hands to grasp, manipulate, or assemble very small objects.

6. Fluency of Ideas - The ability to come up with a number of ideas about a topic (the number of ideas is important, not their quality, correctness, or creativity).

7. Manual Dexterity - The ability to quickly move your hand, your hand together with your arm, or your two hands to grasp, manipulate, or assemble objects.

8. Originality - The ability to come up with unusual or innovative ideas about a given topic or situation, or to develop creative ways to solve a problem.

9. Culinary Art and Related - Specialized knowledge about food ingredients, food preparation processes, food serving, and presentation techniques, etc. This includes knowledge about wines, liquors, and other beverages.

10. Food Preparation - Knowledge of various processes, methods, techniques, and tools for preparing food dishes and serving.

11. Coordination - Skills in working together with other people to get things done.

Career - Job Opportunities & Profiles 

After obtaining certificate/diploma/NSQF Qualification/bachelor degree, you can join as a Kitchen Assistant or as a Commis Chef in the F&B (Food and Beverage) Department of a large scale hotel or a restaurant or a bakery.

Specialisation Tracks In This Career

Baker

As A Baker, You Will Be Baking Food Items Such As Bread, Cakes, Cookies, Etc. By Using Prolonged Dry Heat, Normally In An Oven, Hot Ashes, Or In Hot Stones.

Confectioner

As A Confectioner, You Will Be Trained In Making Confectionary Items (Food Items That Are Rich In Sugar And Carbohydrates Such As Cakes, Pastries, Doughnuts, Scones, Custard, Chocolates, Etc.).

Career Growth

From a Kitchen Assistant, you can become a Commis Chef (assisting Chef de Partie and sous chef). Then you can become a Chef de Partie and handle a section of the bakery (such as a section that handles the kneading process). Then you can become a Sous Chef or Chef de Cuisine and handle a large section of a kitchen handling preparation and cooking of a particular type of dishes or baked food (such as bread, cakes, and pastries, etc. In many bakeries, you can become the Head Chef or be designated as the Master Baker at this stage only. In 5-star hotels and large bakeries, you may need one more step to become the Head/Master Baker/Head Chef (Bakery).

Salary Offered  

1. As an apprentice or trainee, you will be earning about Rs. 7000-10,000 a month.

2. After 2-5 years of experience, you will be earning about Rs. 15,000-20,000 a month.

3. After 6-8 years of experience, you will be earning about Rs. 20,000-30,000 or even more a month.

4. After 10-12 years of experience, your earnings could be about Rs. 25,000 – 1,50,000 or more per month.

5. You may also set up your own business. Initially, you may have to struggle but once your business grows, you can make a lot of money. You may make Rs. 50,000 a month or maybe 5,00,000 a month depending upon the size of your business.

Future Prospects 

As per the report released by IBEF (India Brand Equity Foundation), the Hospitality and Tourism Industry is expected to create around 13.45 million jobs in various departments such as in Restaurants – 10.49 million jobs, Hotels – 2.3 million jobs. The job growth in restaurants sector will also increase the requirement of Baker and Confectioners in the Hospitality Industry.
